Double-boiled Soup

I recently bought three beautiful ceramic double-boiling pots, and I’ve been having so much fun using them. Over the past few days, I’ve made snow fungus soup with red dates and goji berries, steamed eggs, and this morning, fermented sweet rice with egg and milk.
These dishes are simple, delicious, and nourishing. Gentle double boiling is one of the best cooking methods for preserving nutrients while maintaining a balanced, gentle heat. Among them, the fermented sweet rice with egg and milk is my absolute favourite, and I highly recommend giving it a try.
From a Traditional Chinese Medicine perspective, milk and egg white are considered highly yin in nature. On their own, they can be difficult to digest and may contribute to dampness and phlegm in most people. However, when paired with the warming properties of egg yolk and fermented sweet rice, the dish becomes much easier to digest and can be transformed into energy that the body can absorb and utilise more efficiently.
My son has been doing a lot of intensive exercise lately and needs plenty of high-quality protein. I personally don’t recommend relying on protein powders, so I prefer to prepare nourishing whole foods like this to support his recovery and growth.
